The brewery’s owner has Celiac disease, but had a dream of opening a craft brewery. The owner found a way to make beer with a natural enzyme that removes the gluten from the beer. Testing shows that this enzyme reduces the gluten content in beer to undetectable amounts (0-5 ppm) and the FDA considers a food gluten-free if it falls below 20 ppm.
The kitchen they have at the East Village location is completely gluten free. Some of the items you can get from their menu are Brazillian Cheese Bread, Kale Quinoa Salad, BBQ Pork Sliders, Honey Glazed Pork Ribs, and Flourless Chocolate Cake. True Food Kitchen – Located at Suite 394 7007 Friars Road, this restaurant offers dine in option, curbside pick up and no contact delivery. The restaurant offers gluten friendly, vegan and vegetarian options. Some of the gluten friendly dishes it currently has on their menu are Lasagna Bolognese, Kimchi Steak Fried Rice, and Spaghetti Squash Casserole to name a few items. Also, their pizzas, paninis, and sandwiches can be substituted with gluten free crusts, pitas or buns.
